For timed quizzes, there is no hard stop for the end time.

- This means if a quiz has an End Date today at 12:00 PM and a Time Limit of 30 minutes. I could start my quiz at 11:59 AM and I would still receive the full 30 minutes to complete my attempt. I would not be hard stopped at the End Time of 12:00 PM.

With these settings, after the Time Limit expires the student will be prevented from making any further changes to their answers and myCourses will automatically submit their quiz.
Having all attempts done by a specific time
If you wish to have all attempts done by a certain time you must take that into account when configuring settings on your quiz.
